Cooking Vegetables That Diabetics Can Enjoy As: Squash With Chicken And Sauteed Leeks And Zucchini

I am a vegetable, preferring meat products, fish and chicken every day. As a diabetic, I have to watch my intake of potatoes and other carbohydrates, but have found many ways to enjoy healthy dishes vegetables. Here are some recipes of my vegetables I hope you enjoy as well. Chicken Pumpkin uses only half a cup of chicken, but enough to add the necessary proteins for the antenna. Another great thing about this dish is cooked in minutes. Sauté the leeks and zucchini is another big bowl of pumpkin flavored with garlic. This dish is ready in minutes.

CHICKEN WITH PUMPKIN

1 / 2 cup chopped onion

1 / 2 cup celery, sliced

1 teaspoon butter

2 1 / 2 cups squash, sliced

1 cup zucchini

1 / 2 cup of cut or shredded cooked chicken

2 tablespoons water

1 / 2 teaspoon salt

Garlic powder 1 / 4 teaspoon

1 / 8 teaspoon red pepper flakes

1 / 8 c. teaspoon freshly ground black pepper

Melt the butter in a large skillet, add the onion and celery, sauté until tender. Stir the zucchini and yellow squash. Add chicken, water and spices. Cover and bring to a boil. Reduce heat to simmer and cook for about 10 minutes, or until the vegetables are soft. Stir often during cooking.

Leeks and zucchini fries

1 tablespoon butter

2 large leeks, finely chopped

5-6 small zucchini, finely chopped

Tsp salt 1 / 2

2 cloves garlic, minced

In a large nonstick skillet, melt butter over medium heat. Add leeks and saute in the pan for a few minutes. Add remaining ingredients to skillet, stirring to mix. Cover the pan and heat slowly reduced. Simmer for 15 to 20 minutes, stirring occasionally. Remove cover, increase heat to medium and cook about 10 minutes until the liquid evaporates.
